Warming Pumpkin Pies

Cold days.  Arriving home from school/kindy to a warm, home cooked, pumpkin pie afternoon tea.  Served with a lightly spiced homemade Chai or After-School Hot Chocolate.  Very happy children!

These are easy to make (throw in the food processor), are just as nice warm or cold, freeze well (if there is any left!), and are just plain delicious.  Essentially they are a pumpkin pie filling, rather than a pumpkin pie, but let’s face it…the filling is the best bit!

I have already e-mailed this recipe out to many of you and have had comments back such as “Yum! So easy to make and so so delicious!! 2.5 yr old loved it and 10 month old loved making a mess of it while trying to devour it too”.

You can make these as one big pie or I prefer individual pies, the kids love having one each for afternoon tea.Individual Pumpkin Pies

Cook your pumpkin following the instructions here.  If you have already got pumpkin in the freezer then all the better!

This is a perfect nourishing after-school pick-me-up or winter dessert. Can serve warm or cold, we like it warm straight from oven. To be truly decadent, serve with coconut or cashew whipped cream.

Ingredients
  • 3 eggs
  • 2T honey
  • 1½ cups cooked pumpkin flesh
  • 200ml coconut cream
  • 3cm piece of ginger, grated
  • 1 tsp cinnamon
  • ½ teaspoon nutmeg
  • ¼ tsp ground cloves
  • pinch salt
  • 1 heaped Tbsp cornflour
  • grated zest of 1 lemon (optional)
Method
  1. Preheat oven to 180c, and grease 6 ramekins (or one larger pie dish if preferred)
  2. In the food processor put eggs and honey, and process for a couple of minutes, until it is getting creamy.
  3. Add the rest of the ingredients and process till smooth.
  4. Pour into greased ramekins and bake at 180 for about 35-40 mins (longer if one large pie).

  1. These are so delish! Thank you. At home with two children with the flu and these are such a wholesome treat! Made a few changes…banana instead of honey, and orange zest instead of lemon. I love the spices and the fresh ginger is zingy and healing. Pinning this one.
