A Platter of Truffles

Truffles and Chocolate Balls

You will have gathered by now that I love little round ball snacks!  Call them bliss balls, energy balls, truffles, brain balls…whatever their title I love them!  All the balls I make are gluten-free, dairy-free and refined sugar-free, packed full of superfood goodness…but most importantly yummy scrummy!

Tomorrow we have two birthday parties to attend. When you have children with special food requirements we have found it is a good idea to take some food along to ensure there is something suitable for them to eat.  Tomorrow we are taking this little platter of truffles.

Chocolate Energy Balls

Ingredients:

  • 1 cup walnuts
  • 1/2 cup raw cashews
  • 2 Tbsp carob or cacao
  • 1/2 cup roughly chopped dates, soaked in boiling water for 10 minutes
  • 2 Tbsp coconut oil
  • 1/4 cup desiccated coconut
  • chia seeds, cacao nibs, cacao powder, white or black sesame seeds or crushed nuts for rolling

Method:

  1. Combine the walnuts, cashews and carob/cacao in a food processor and blitz until a fine powder.
  2. Add the dates, coconut oil and desiccated coconut and blitz until well combined.
  3. Roll into teaspoon-sized balls, then roll in your chosen extra.  I split the batch into three and rolled one-third in chia seeds, one-third in cacao nibs and one-third in desiccated coconut.
  4. Chill in the fridge for 30 minutes before serving.  Will keep in fridge for 3-4 days.

Lemon and Coconut Truffles

These lemon truffles are heavenly.

Ingredients:

  • 1 1/2 cups unsweetened desiccated coconut
  • plus 1/2 cup for coating
  • 1 cup ground almonds
  • 4 Tbsp extra virgin coconut oil
  • 2 Tbsp honey
  • zest of one lemon
  • juice of one lemon
  • 1 tsp pure vanilla extract
  • a pinch of sea salt

Method:

  1. In a food processor, add all of the ingredients. Blend for 1-2 minutes, or until the mixture starts to mix together like a dough.
  2. Use your hands to form small balls.
  3. In a separate bowl, add the extra coconut. Roll the balls in the coconut until well coated then transfer to a plate.
  4. Place in the fridge for at least half an hour to set.

The truffles can be kept at room temperature, but I find they are best kept in the fridge.

Makes around 25 truffles.
