The easiest most flexible cookie recipe ever!

Well here it is, the first recipe to make it onto the Fuel Your Family Blog.  You asked for healthy, easy, affordable recipes.  You asked for allergies to be considered.  You asked for lunchbox ideas.  You expressed your frustration at going to make a recipe and finding you didn’t have all the ingredients.

Here is the answer!  This recipe covers it all!

It is such an easy recipe, that these two can make it virtually unassisted.

You start by breaking a couple of ripe bananas into a bowl.

If you don’t have bananas cook up and puree a couple of apples to use instead.  Or open a tin of pear, drain and rinse well and mash.

Quick-cook oats work best, but we only have wholegrain oats in the house.

No worries, we just pulse these ones a couple of times…

…et voila!  If your family can’t do oats, crush up the equivalent amount of plain rice cakes, or use cooked brown rice.  You could also use quinoa flakes.

Add your chosen extras.  For this batch we threw in some sultanas, cinnamon and coconut.

Mash together with a fork until it looks like this:

Roll into balls and flatten gently with a fork.

Create-a-Cookie

Serves: approx. 16 cookies

Ingredients:

  • 2 ripe bananas (or equivalent cooked apple or pear)
  • 1 cup of quick-cook oats (or equivalent crushed rice cakes, cooked brown rice, or quinoa flakes)

Your choice of additions from the list below.

Method:

  1. Preheat the oven to 180c.
  2. Put all the ingredients in a bowl and mash together with a fork.
  3. Roll into approximately 16 balls, place on a cookie sheet and flatten gently with a fork.
  4. Cook in preheated oven for 10-15 mins

ADDITION SUGGESTIONS:

  • 1 tsp cinnamon, 1/4 c sultanas
  • 1 tsp cinnamon, 1/2 cup total of grated carrot, sultanas and chopped walnuts
  • orange zest and toasted hazelnuts
  • chocolate chips
  • coconut
  • protein powder
  • nut butter
  • fresh berries
  • sunflower seeds
  • chopped dates
  • lemon zest
  • ginger
