Sunflower Seed Butter
Nut allergies are increasingly common in young children, and due to the seriousness of the potential reaction many daycares, kindergartens and primary schools have become nut-free facilities. This simple recipe for sunflower seed butter can be used in exactly the same way you would a nut butter: apple nut butter sandwiches, on sandwiches and rice cakes, on celery sticks and in baking.

SUNFLOWER SEED BUTTER
Nut Free
Ingredients
- 2 cups sunflower seeds
- a little drizzle of olive oil
- a pinch or two of sea salt
Method:
- preheat oven to 160C
- spread sunflower seeds evenly on roasting tray
- put in oven for 15 minutes, giving a little shake around every 3-4 minutes to prevent burning
- place in food processor or high-speed blender with the olive oil and salt, and process until smooth
- be patient! This takes a little longer than nut butter, 10-12 minutes processing does the trick
Enjoy as you would nut butter – on celery sticks, in apple sandwiches, on rice cakes, in baking (delicious added in some bliss balls). Perfect for those with nut allergies, and to send along in lunchbox to nut-free daycares, kindys, and schools.
