Two Ingredient Pikelets
Naturally gluten-, dairy-, and sugar-free…
…and best of all delicious!
Tonight I have been preparing breakfast, one of our family favourites. I want to kick the day off on a special note, as tomorrow it is 10 years since Craig and I got married.
So the bench has a buckwheat pancake mix soaking, ready to just add the eggs in the morning. It is a recipe I have been playing with, combining different recipes, with and without baking powder, deciding how I prefer them. Once I have the recipe perfected I will happily share it with you.
In a small saucepan, ready waiting on the stove to just be turned on in the morning, is the berry sauce mixture: frozen mixed berries, vanilla, stevia, orange zest and water.
And in the fridge is a bowl of freshly made cashew nut cream, which is a recipe from Supercharged Food . Yum!
But that is not what you are here for…you want to know what this little darling was happily stuffing in her mouth on the Facebook photo!
Have you made some guesses as to what the two ingredients in these pikelets are? No, there is no flour what-so-ever. It is simply:
Yep: 2 eggs and 1 banana. That’s it!
This is a recipe that has been circulating the internet for a while, and I was unable to work out exactly who to credit for it.
Mash the banana (I prefer to do this in my little mini Tupperware choppy thingy-ma-jig. It makes the banana so smooth. But a fork will do the job). Break in the eggs and mix well.
Heat a little bit of coconut oil in a frypan over medium heat. If you don’t have coconut oil, buy some! It is amazing stuff (I will get into that in another post). Or you can use butter, being careful to not let it burn, or preferably ghee, if you don’t have coconut oil.
Ladle in spoonful of the mixture, cook til bubbling, then turn, just like regular pikelets.
That’s it. Done. I like to eat them warm and fresh, but we do put them in the kids lunchboxes too.

Ingredients:
- 2 eggs
- 1 banana
Method:
- mash the banana very smooth
- break in the eggs and mix well
- melt some coconut oil in a frypan over a medium heat
- ladle spoonfuls of the mixture into the pan.
- Turn once they are bubbling and cook briefly on the other side.
