Walnut and Cacao Brain Balls
I love having different balls in my freezer, ready to put in the kids lunchboxes. These balls are sweetened only with dates, contain vitamin E and zinc along with being an excellent source of omega-3 fatty acids.
TIP: keep your nuts in the freezer, it prevents them going rancid and maintains the quality of the healthy fats they contain.
I think you can tell by now that I have a chest freezer!
This recipe is slightly adapted from Dr Libby’s book The Real Food Chef. You can halve the recipe if you wish.
Walnut and Cacao Brain Balls
Ingredients:
- 2 cups of walnuts
- 1 cup sunflower seeds
- 1 cup coconut, shredded
- 2/3 cup raw cacao powder
- 1/4 cup of dates, soaked in boiling water for 10 minutes to soften, then coarsely chopped
- 1/4 cup water
- pinch sea salt
Method:
- Combine the walnuts, sunflower seeds, dates and coconut in the bowl of a food processor. Pulse until the ingredients are combined.
- Add the cacao, salt, and water to the bowl and process until the mixture forms a dough.
- Roll medium sized portions into balls and place in a container in the fridge.
