Why I love Sundays

Sundays have become a little ritualised in our house.  All good rituals…A good breakfast, and a bit of TV (the only day of the week with morning TV so it is a treat).

Church.

Roast lunch.  With as many different vege sides as we have time to create.  Which is usually at least 4.  Today we had brussel sprouts (done the most yummy way with bacon and pinenuts); roast carrot, pumpkin, kumera, and red-skinned potato on a bed of spinach; broccoli; beans; sauerkraut.  Yum!

Friends to share lunch with…although this weekend we have been a bit unwell so kept our bugs to ourselves.

After lunch we generally have a bit of time with the youngest two in bed, and we play some games with the older two.  They love this time getting to do something a little more grown up.

Then we prep food for the week while making afternoon tea.

Today we made a carrot mousse for afternoon tea, which we served with the last of the cashew cream we made for Friday morning’s pancakes.

It took an hour to bake, so we got lots of other things prepared for the week at the same time.

This is the other thing I love about Sunday’s: being prepared!  By Sunday evening the food planning is done for the week, the weekly activities planner written up, some lunch box additions made and some of the meal prep for the week done.

For example for the week ahead we have prepared:

Apple oatmeal cookies
  • Kumera chips
    Kumera chips
  • Activated Tamari Almonds

  • popcorn with nutritional yeast sprinkled on it
  • Limes juiced into ice cubes...they were on a great special this week

  • Broccoli, beans and cubed pumpkin ready for the freezer

  • More pumpkins roasting, ready to be pureed and frozen

  • Ihdividual Pumpkin Pies

  • Carrots cubed ready to throw into dinner, breakfasts, smoothies etc

Sunday night dinners finish up our Sunday routine: it always consists of the leftovers from Sunday lunch, all thrown into a frittata or on top of a chickpea pizza base.  So easy, incredibly tasty!
